The Company
La Marzocco was founded in Florence, Italy, in 1927. In 1939, it was La Marzocco that developed and patented the first espresso machine with a horizontal boiler — now the industry standard every modern machine is built around. Today, La Marzocco remains an artisan company, still hand-assembling machines while pushing genuine advancements in equipment technology.
The Product
Wally Milk solves the one part of café service that's hardest to make consistent across a busy shift: milk texturing. It connects to any La Marzocco or Modbar machine, and most other commercial espresso machines besides — place a jug on the tilt tray, and it automatically scans the jug and adjusts steam quantity to the milk volume in front of it. No measuring, no special equipment, no relying on a barista's muscle memory to get it right every single time.
Multiple sensors track temperature and consistency continuously, so your customers get the same properly steamed milk they expect, whether it's the first order of the morning or the two-hundredth. Automatic volume recognition, a vortex steam tip, and a tiltable pitcher tray deliver barista-quality foam at the push of a button, and it works with non-dairy milks and milk combinations too — save over 20 recipes so oat, almond, or a house-blend gets exactly the treatment it needs every time, without a barista needing to remember the difference.
The rush doesn't slow down milk quality when Wally's doing the texturing — consistent, barista-grade foam without needing a barista's full attention on it.
Who It's Built For
For the café that's serious about milk consistency across every shift and every barista — where training new staff to texture milk properly takes weeks, and a single bad pour can undo an otherwise perfect espresso. It's built for high-volume service where the barista's attention is better spent on the customer in front of them than on watching a steam wand.
It's also a strong fit for any café serving a wide range of milk types — dairy and alternatives alike — since Wally removes the guesswork of adjusting technique for each one.
