The R2 measures the angle of light refracted through a liquid to determine the amount of dissolved solids in the liquid. The variables of coffee (grind size, amount of coffee, water temperature, water amount, flow rate, pressure etc.) affects how much solid material is in your coffee. Too much water and too little solid material = under extracted coffee. Too little water and too much solid material = over extracted coffee.

With the help of Difluid Cafe, the R2 and the Difluid Microbalance Scale you can track your recipe on your smartphone, or find recipes online of your favourite coffee roasters. Now you can make coffee the way the roaster intended it to be in the comfort of your home.
