About the Brand
Ditting was founded in 1928 in Switzerland, originally as an automotive engineering firm before finding its true calling in 1954, when it entered the coffee grinder market. In 2008 Ditting joined Mahlkönig to form the Hemro Group, and today its grinders are distributed across more than 70 countries — many of them still running, decades after installation, on the strength of Swiss engineering built to outlast the businesses around it.
The Product
The Ditting 807 Lab Sweet Commercial Coffee Grinder is the only 807 model fitted with premium cast steel burrs and a special grinding teeth geometry, built to fulfil the highest quality requirements Ditting sets for itself. That geometry produces an optimal particle size spread for consistent extraction and more sweetness in the cup, with retention close to zero. It's built equally for laboratory cuppings and for grinding single portions at the coffee shop counter — precision extraction, whichever counter it sits on.
Premium Cast Steel Burrs (Special Geometry for Sweetness)
A special grinding teeth geometry on premium cast steel burrs produces perfect particle sizes and shapes for excellent extraction results and more sweetness in the cup.
Near-Zero Retention (Lab-Grade Consistency)
Retention sits close to zero, so what you dial in is what actually ends up in the cup — critical for cupping work and single-portion accuracy alike.
Height-Adjustable Folding Table (Flexible Container Positioning)
A height-adjustable, foldable and removable table lets you position a grounds container or bag exactly where you need it, whatever your setup.
Stainless Steel Grounds Container (Easy Handling)
A stainless steel container makes handling and cleaning between samples or portions straightforward.
700W High-Performance Motor (550g/min Average Output)
A stronger 700W motor than the standard 807 pushes average performance to 550g/min, without giving up the precision the Lab Sweet is built for.
Dual Active Cooling Fans (Temperature Management)
Two active fans manage heat during sustained use, holding performance steady at a lower operating temperature.
Extra-Wide Grind Range (Turkish Fine to Cold Brew Coarse)
The same wide adjustment range as the standard 807, from Turkish-fine grounds through to the coarsest cold brew setting.
Who It's Built For
You're running cuppings at a lab, or grinding single portions at a specialty counter, and you need close to zero retention with consistent sweetness in every cup. You can't afford grind variation to be the reason a cupping score is off, or a single-portion pour doesn't match the one before it. The Lab Sweet is built to remove that variable entirely — precision you don't have to double-check.

Summary
The 807 Lab Sweet takes Ditting's Swiss engineering and points it at the top end of precision — cast steel burrs, near-zero retention and a sweetness-focused geometry built for labs and specialty counters alike. If close to zero retention and a consistently sweeter cup are non-negotiable, this is the 807 built for that standard.
