About the Brand
Eureka has been designing and building coffee grinders in Florence, Italy since 1920, founded by Aurelio Conti. More than a century on, the company is still based in Sesto Fiorentino and hand-assembles its grinders in the same Florentine factory, having grown into one of the most recognised names in espresso grinding worldwide — trusted by cafés and roasters for pairing precise Italian engineering with genuine artisanal craft.
The Product
The Eureka Mignon Zero 55 Espresso Grinder takes everything that made the Specialita a strong home grinder and rebuilds it as a single-dose machine, with a bellows-style hopper designed to leave close to zero coffee behind between grinds. Load exactly what you need, grind it, and move on — no beans sitting in a hopper going stale. This is single-dosing built into the compact Mignon body you already know.
Key Features
55mm Flat Hardened Steel Burrs (Consistent Grind)
The 55mm burr set grinds at 1.2–1.8g/s, giving you the same particle consistency as Eureka's other Mignon models in a single-dose format.
Single Dosing, Up to 45g (Fresh Grind Every Time)
Load only what you're about to grind — up to 45g per dose — so beans never sit ground and exposed to air before you brew.
Bellows Hopper (Near-Zero Retention)
A collapsible bellows hopper replaces the traditional bean chamber, pushing leftover grounds out of the chamber so almost nothing carries over into your next dose.
Dosing Cup Included (Ready to Use)
A 58mm stainless steel dosing cup ships with the grinder, so you're set up for single-dose workflow from the first grind.
Hands-Free Portafilter Fork (Removable)
The fork holds your portafilter steady while you grind and lifts out for cleaning or to swap in the dosing cup.
Stepless Micrometric Regulation System (Precise Dial-In)
Eureka's patented stepless system lets you fine-tune grind size in small increments rather than jumping between fixed settings.
Who It's Built For
You've moved to single dosing because you want every gram of coffee ground fresh, not sitting in a hopper from yesterday. The Mignon Zero 55 gives you that workflow with Eureka's 55mm burr precision and a bellows hopper built specifically to chase down retention. It's built for the single-dose purist who measures beans before they measure anything else — grind what you need, when you need it.

Summary
The Eureka Mignon Zero 55 puts single-dose grinding into a familiar, compact Mignon body, so freshness doesn't come at the cost of the burr precision you'd expect from Eureka. If retention has been bothering you more than your grind setting has, this is the fix.
