Kalita is, similar to Hario, a Japanese company that has challenged the Hario brand in producing pour-over drippers. Kalita has successfully built a pour-over dripper that is now trusted by coffee connoisseurs globally.
The process of making this pour-over coffee is one that can take finesse and skill, or be as simple as you like.
Brewing guide:
20g coffee - 340g water – 3 min brew time
Step 1
Measure and grind coffee. Ground coffee should be course, similar to the grind used for a French press.
Step 2
Pour hot water through the filter to wet the paper and to warm up the filter and the cup/decanter.
Step 3
Add the ground coffee to the filter.
Step 4
Wet the coffee. Use 60 grams of water (three times the dry weight of ground coffee). Bloom for 30-45 sec.
Step 5
Pour more water using a slow, gradually rotating movement on the grounds until the scale shows 200 grams. Let steep for 30 sec.
Step 6
Use the rest of the water to first clean up the brim of the filter and then pour the rest of the water on the grounds with a rotating movement until the scale shows 340 grams.
Step 7
Swirl the cup/decanter before serving. And enjoy!
