About Mazzer
Mazzer has built coffee grinders in Venice, Italy since 1948, when founder Luigi Mazzer began producing grinders and burrs by hand. Three generations later — Luigi, his son Giovanni, and now his grandson — the company still designs, manufactures and assembles every core grinding component in-house. Mazzer grinders now work behind bars in more than 100 countries, and that consistency has made the brand one of the most trusted names in commercial coffee grinding.
The Product
The Mazzer ZM Filter Grinder is built for specialty cafés running both filter and espresso off one machine, switching between the two simply by changing burr sets. Its digital adjustment system controls burr distance in microns rather than a vague dial position, so a grind setting is something you can write down and repeat exactly. This is Mazzer's answer to cafés that refuse to choose between filter and espresso.
Key Features
83mm Flat Burrs — Filter & Espresso Sets (One Grinder, Two Brew Methods)
Swap between the 151F filter burr set and the 151B espresso burr set to run both extraction methods from a single machine.
Digital Micron Adjustment (Repeatable, Accurate Grind Settings)
Burr distance is controlled and displayed in microns, giving you a grind setting that's precise, understandable and exactly repeatable.
20 Recordable Grind Positions (Save Every Recipe)
Store up to 20 named grind settings on the display, so returning to a specific coffee's recipe takes seconds.
4 Programmable Recipe Buttons (Quick Recall Mid-Service)
Four pre-programmable buttons pull up your most-used recipes instantly, without scrolling through the full settings list.
Under 0.45g Retention (True Single-Dosing)
Coffee retention stays under 0.45 grams, low enough to single-dose accurately without waste carrying over between grinds.
Flipping Digital Display (Easy Access For Cleaning & Burr Changes)
The display flips aside to expose the grinding chamber, making cleaning and burr swaps between filter and espresso quick.
Double Fan Cooling System (Stable Temperatures Through Service)
A double fan cooling system keeps the burrs from overheating through sustained grinding, protecting the coffee's aromatics.
Who It's Built For
The ZM Filter is built for specialty cafés and roasteries that serve both filter and espresso and need one grinder precise enough for both. If your team is running cuppings, service, and quality control off the same bar, this grinder's micron-level repeatability fits directly into that workflow.
One grinder, two brew methods, zero compromise on precision — that's the ZM.

Summary
The Mazzer ZM Filter puts micron-precise, repeatable grinding behind both filter and espresso in a single machine. For specialty cafés that won't compromise on either brew method, this is the grinder built to run both without a second unit taking up counter space.
